Some Thoughts From The Comparison
I think GitBook is very good. While it will provide good integration with Git, the learning curve will be slightly steeper compared to Document360. (Not a big deal).
I see Document360 with a better presentation of the doc site – more user wow.
If you want to have user dialog – Document360 scores there – as they have OOB support for user discussions. GitBook seems to have only rating of articles by users. This is an important feature- as you would want the users to be involved and interact with you – they will comment and highlight any issues in an article or if they need more information about something. This goes a long way to ensure improvement in the documentation.
If you have localization/translation as a requirement, Document360 can be faster to help you provide machine translation.
I see Document360 as a more OOB package of features with better presentation and ease of use – but they have self-imposed limitations, such as limits on usage of various features and limitations on number of page views.
